They are well known to aid weight loss while adding nutritional value to our diet. In addition, they help to improve vision and prevent all diseases that appear from vitamin C deficiency.

Here is a simple delicious recipe for zucchini moussaka that is not only a healthy summer meal but a delicious and nutritious food.
Ingredients:
- zucchini - 2 pcs.
- eggplants - 1 pc.
- potatoes - 2 pcs.
- cherry tomatoes - 10 pcs., yellow
- parsley
- cheese - 100 g
- sour cream or yogurt - 100 ml
- salt - 1 tsp
- black pepper - 1/4 tsp.
- olive oil - 2 tbsp.
Preparation:
Peel the zucchini, eggplants and potatoes and cut all the vegetables into circles.
Put all the vegetables in a bowl, cover them with olive oil, salt and black pepper and mix.
For the base, arrange the potatoes, sprinkle with a little cheese, then eggplant, cheese, cherry tomatoes, cheese, zucchini.
Place in the oven to bake at the highest temperature for 20 minutes.
Mix sour cream or plain Greek yogurt with the spices. Pour over the vegetables and bake the delicious moussaka for another 10-15 minutes.
Serve the light courgette, eggplant and potato moussaka with a salad of your choice. (Best is green leaf home-grown salad)
